Brown Sugar Bacon
Ingredients:
1 (12-ounce) package thick-sliced bacon, preferably apple smoked
1 cup firmly packed golden brown sugar
Separate bacon slices and lay them in one layer on a large baking sheet. Sprinkle brown sugar evenly over bacon. Cover with aluminum foil or plastic wrap and refrigerate overnight.

Preheat oven to 350 degrees. Coat a wire rack with cooking spray and set the rack on a piece of waxed or parchment paper; set aside.

Remove foil or plastic wrap covering bacon and bake until crisp, 25 to 30 minutes. Remove from oven. Using tongs, transfer bacon to prepared wire rack. Let slices cool to the touch, then cut them in half crosswise and thread the slices on a metal or wooden skewer. Arrange the skewers on a serving platter and serve the bacon at room temperature. For a less fussy approach, forget the skewers and just pile the bacon on a platter.
